Our signature Piña Colada Gateau combines a gluten-free coconut dacquoise sponge with layers of passionfruit cremeux, juicy pineapple compote, and silky vanilla whipped ganache, finished with a glossy apricot jelly, toasted coconut, and a hint of fresh mint. Inspired by the tropical cocktail, it's bright, refreshing, and perfectly balanced.
